    Step 1- In beekeeper’s shoes

    In Pays du Roquefort, we have ewes but also bees! Follow Nadia and Bruno for a real immersion inside bees’ world, a privileged discovery of 2h00, during which one of you wears the outfit!

    After a learning time about basis gestures with the beekeeper Bruno, he guides you to the meeting with bee colony, very gentle.

    In the middle of our kindly bees’ drone, open the hive, make several manipulations and discover an intense life… It is magical: the queen, the brood, the workers are busy, harvests in progress are shining, revealing their perfume. Your loved ones, protected behind a patio door, won’t miss a thing, with live sound and images!

    After this personal meeting with our bees, what could be better than a tasting? During an introduction to organoleptic analysis of flavours, you will have at least 10 honeys to taste. Will you know how to identify wooded, floral and wild hints in our honeys?

    A memorable experience, guaranteed to awaken the senses within a world as fascinating as gourmet!

    Step 2 – Alcas Farm

    Keep up the sensory experience inside the splendid, fortified village of Saint-Jean d’Alcas, within bucolic setting of the Alcas Farm.

    Alexandre, a breeder at heart, and Emilie, a seeker of meaning, have been picked up the family torch that has kept the Alcas Farm for over 5 generations. They look after 300 ewes which produced a certified organic and Demeter milk. This milk, so carefully harvested, is partly delivered to the Société company to produce Roquefort, and for the rest, it is transformed into cheese at the farm: the Bleu d’Alcas as well as yogurts in a wide range of flavours, that make those biodynamic producers well-known, well beyond the Aveyron department.

    Proud of this savoir-faire, they share their passion by offering you a warmly welcome and a one-hour tour of their farm. Through a photography exhibition that recount the steps of the production of a yogurt and a cheese, their work and the biodynamic farming particularities will no longer hold any secret!

    At the end of the visit, it is the gourmet time with the tasting of their ewes’ unpasteurised cheese, their yogurts or their jam. Your surely come away with a different perspective on agriculture and the living world.

    Step 3 – In “cabanière”’s shoes

    Let yourself be carried along the taste and the smell of the King of Cheese to reach the village of Roquefort and its cellars. Discover the legend and the ancestral cheese-making savoir-faire of Gabriel Coulet, family company created in 1872, that collects medals at agricultural competitions.

    You will start the visit with a 20-minutes movie that recounting the family’s story which is proud to perpetuate the heritage of 5 generations of cheese-making expertise.

    Take the stairs, towards the reconstituted salting room and learn about the “cabanières”’s valuable handiwork that carefully packed this white and blue gold that is Roquefort. As you will see, it is not that easy!

    All this will make your mouth water. The final tasting of Roquefort and ewe’s tome with a glass of wine will certainly satisfy gourmand’s taste buds!

    Your place of stay:

    Inside the apartment complex Le 1837, discover a real haven of peace. This exceptional place is ideal for relaxation. In this place, everything has been thought for your comfort and well-being. The hotel’s heated pool accessible 24 hours a day is located at the heart of a welded steel structure with a zinc roof reminiscent of the Eiffel Tower and Parisian rooftops. You will be able to sim in this mirror pool that reflects the Park and its surrounding forest.

    As a supplement and by reservation, you can relax and enjoy quite an array of body treatment, beauty makeover and solo or duo massages, but also sauna, hammam or jacuzzi sessions. The hardest part will be to choose!
